About Barbacoa

Barbacoa is a form of cooking meat that originated in the Caribbean with the TaĆ­no people, who called it by the Arawak word barbaca, from which the term "barbacoa" derives, and ultimately, the word 'barbecue". In contemporary Mexico, it generally refers to meats or whole sheep or whole goats slow-cooked over an open fire or, more traditionally, in a hole dug in the ground covered with agave (maguey) leaves, although the interpretation is loose, and in the present day (and in some cases) may refer to meat steamed until tender. This meat is known for its high fat content and strong flavor, often accompanied with onions and cilantro (coriander leaf).

House Rules

  1. The food comes out when it's hot and ready. We have two kitchens and both are very small so when the plate is ready, it comes out. Meaning sometimes guests will get their food at different times.
  2. When we are out, we are out. Brisket takes 11 hours to cook. When we are out, we are out.
  3. If you are dissatisfied, please let us know, we can make you something different.
  4. Place your order at the counter or with a QR code, we will bring everything out to you.
  5. Full table service is provided with a reservation, 24-hour advance notice.
